Butternut Squash and Applesauce Muffins

As a mom, I am always looking for nutritious and easy recipes. Most importantly, I look for foods my son likes! This is one of our favorites, I cook them on Sunday and I send the muffins as a snack at school through the week or use it as a breakfast item. The best is that is that the recipe calls for butternut squash.
Butternut Squash Muffins
Makes 12 muffins Ingredients
1 cup of oatmeal
1 cup of white flour
1 teaspoon baking powder
1 teaspoon of cinnamon
Pinch of salt
1 cup of applesauce
1 cup butternut squash
1/3 brown sugar
1/2 cup low fat milk
1 large eggs
2 tablespoons of coconut oil
1 teaspoon vanilla
2 tablespoons of cranberries
One of my son's favorite recipes! Especially because it has butternut squash, and we all know vegetables are hard to eat for the little ones.
Pre-heat the oven to 375 ° F.
Use coconut oil to grease a 12 muffin mold (or if you wish you can put paper pirouettes). Put aside.
In a medium bowl, combine oats, applesauce, butternut squash, milk, egg, vanilla, coconut oil and sugar. Put aside.
In a large bowl, mix flour, baking powder, cinnamon, salt and blueberries.
Make a hole in the center and add the oatmeal mixture.
Mix lightly until combined. Avoid mixing excessively to avoid muffins coming out dense.
Distribute the mixture evenly in the mold.
Cook for 15-20 minutes until you can insert a toothpick into the mixture and it comes out clean.
